Decadent Double Chocolate Brownies

 

These decadent fudgy brownies are rich and delicious without all the fat of traditional brownies while including the health benefits of added fiber and protein from beans. Plant powered brownies!

Ingredients

  • 1 1/2 cups white cannellini or Great Northern beans, drained and rinsed

  • 1/3 cup maple syrup

  • 3/4 cup Agave 50 by Whole Earth (a 50/50 blend of Agave and Stevia)

  • 1 cup unsweetened applesauce

  • 1 Tablespoon baking powder

  • 1 Tablespoon vanilla extract

  • 1/2 teaspoon salt

  • 1 cup cacao powder

  • 2 cups oatmeal flour (made by blenderizing oats)

  • 1/3 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Lightly spray 9x13 pan with baking pan with cooking spray.

  2. Using a food processor or high speed blender, add beans, maple syrup, Agave 50, applesauce, baking powder, vanilla extract, and salt and blend for a minute or until smooth. Scrape sides.

  3. Add oatmeal flour and cacao. Process for 1-2 minutes.

  4. Pour mixture evenly in pan.

  5. Sprinkle chocolate chips on top.

  6. Bake for 30-35 minutes. Use a toothpick and check at 30 minutes for doneness. If the toothpick comes out clean, the brownies are done.

  7. Remove from the oven and let cool about 15-20 minutes. Cover with foil after cooled and store at room temperature.
