This is an easy substitute for guacamole that is lower in fat and calories and higher in protein. Serve with your favorite whole grain chip or fresh veggies or use as a spread on sandwiches instead of mayo.
Makes 8 (1/4 cup) portions
2 cups shelled edamame
4 ounces silken tofu
Juice from one medium orange
Juice from one lime
1/4 tsp. salt
2 tablespoons water
1 tablespoon minced garlic
1 tablespoon canned diced green chilis or chilis in adobo sauce
1/2 cup chopped red onion
1/2 cup chopped tomato
2 tablespoons chopped cilantro
Blend edamame, tofu, orange and lime juice, salt, and chilis in a food processor.
Add water as needed to blend thoroughly until smooth.
Remove mixture from processor and place into small bowl.
Stir onion, tomato, and cilantro into edamole. Salt to taste.
Serve with your favorite whole grain chip or fresh veggies.
Use as a spread on sandwiches instead of mayo.
Add a little hot sauce or more chilis for a little zing!
