Recipe Remix*:

  • Swapped some of the sugar for stevia baking blend

  • Swapped out unsweetened plant based milk for dairy milk

  • Cut the fat by limiting or omitting the pecans and chia seeds

Here's a simple and delicious way to start your Thanksgiving (or any) morning. Simply combine all the ingredients (except the pecans) the night before, portion into Mason jars, sprinkle pecans on top of each serving, tighten the lid, and your grab n’ go breakfast is ready.

 

 

prep time: 10 minutes Cook Time: 8 hours Serves: 2

What You Need

  • 1 cup rolled oats

  • 1 cup unsweetened almond or oat milk

  • 1 cup pumpkin puree

  • 1 1/2 T. chia seeds

  • 1 T. stevia

  • 1 1/2 tsp. pumpkin pie spice

  • 2 T. chopped pecans

How To Make It

1.  Combine all the ingredients, except the pecans, in a medium bowl. Mix well. 

2. Either cover the bowl or divide into small Mason jars and place in the refrigerator overnight. 

3. Top with chopped pecans & enjoy.

tips & tricks:

  • Store for up to 4 days in the refrigerator. 

  • Serve warm or cold. If serving warm, place Mason jar in microwave for 30-60 seconds.
